PASTA CON ESPINACA Y NUECES
Spinach Walnut
Pasta
2 cups vegetable
broth
1/2 cup crushed
tomatoes
1 diced tomato
2 cups dry whole wheat pasta, uncooked
2 tablespoons
Olive Oil
2 cup baby spinach
leaves
1/3 cup chopped
walnuts
1/2 cup vegan
Parmesan cheese
Combine broth,
crushed tomatoes, diced tomato, olive oil,
spices and pasta
in a pot. Bring to a boil over medium heat, stirring occasionally.
Cover reduce heat
to low and cook 10 minutes or just until pasta is tender.
Stir in spinach
and cook 3 minutes stirring occasionally.
Sprinkle with
walnuts and cheese just before serving.
