Jambalaya Vegan Rice

1 finely chopped onion
½  cup green pepper (chopped)
2 garlic cloves (minced)
1 tsp olive oil
1 cup fresh tomatoes (chopped)
2 cups water
1 cup instant brown rice (uncooked)
1 tbsps reduced sodium soy sauce
1 tbsp fresh parsley (minced)
1/4 tsp salt
1/4 tsp paprika
1/8 tsp cayenne pepper
1/8 tsp chili powder
1/8 tsp pepper

In a medium pot heat the oil with the onions,
tomatoes, green peppers, garlic and parsley.
Add the water, rice, beans and spices. Cook at
low heat for about 15 minutes or until tender.
If you use regular brown rice you will need
more water and a longer cook time.  
Red Cabbage Salad

1 cup steamed broccoli
1 cup shederred red cabbage
1/2 cup shederred carrot
1 tablespoon olive oil
2 teaspoon balsamic vinegar
Salt, black pepper,
garlic powder to taste

Steamed the broccoli and cut the
Red cabbage and carrot. Mix the
Vegetables together.  Mix the olive oil,
 balsamic vinegar, salt, black pepper
and garlic powder. Pour over the salad.
